High-Protein Vegan Black Bean Burger with Spicy Sauce | VeganV Metabolic Recipes

The Ultimate Black Bean Burger (Firm, Spicy & Purely Metabolic)

Forget the mushy, bland veggie burgers of the past. At VeganV, we’ve cracked the code for a black bean burger that holds its shape, grills beautifully, and fires up your metabolism with a kick of spice.

As a Plant-Based Performance Coach, I advocate for black beans as the ultimate “resistant starch” source. They feed your gut microbiome while keeping your insulin levels steady, making this the perfect “Fat-Burning Burger” for your weekend cookout.

The addition of our signature spicy sauce doesn’t just add flavor—capsaicin from the peppers provides a temporary thermogenic boost, helping your body burn more calories while you enjoy every bite.

Why Most Veggie Burgers Fail (and How We Fixed It)

The biggest complaint about bean burgers is that they fall apart. We use three specific “anchor” techniques to ensure a meaty texture:

  • The Roast Method: We roast the beans for 15 minutes before mashing. This dries them out slightly, concentrating the flavor and creating a sturdy base.
  • Flax “Egg” Binding: High in Omega-3s, ground flaxseeds act as the perfect glue without the need for processed binders.
  • Triple-Fiber Profile: Combining beans, walnuts, and oats creates a texture that mimics the “chew” of a traditional burger.
“My husband is a lifelong meat-eater, and he actually asked for seconds of these! The spicy sauce is addictive, and I love that I can eat a burger without feeling heavy and tired afterward.”

Forming black bean burger patties

Instructions:

  1. Roast: Preheat oven to 325°F (160°C). Spread drained beans on a baking sheet and roast for 15 mins. Let cool.
  2. Mash: In a large bowl, mash 3/4 of the beans with a fork. Leave some whole for texture.
  3. Combine: Add chopped walnuts, oats, spices, and the flax egg. Mix until the dough is firm enough to form patties.
  4. Shape: Form 4 large, thick patties. If they feel too wet, add another tablespoon of oats.
  5. Cook: Grill on a cast-iron skillet over medium heat (with a touch of oil) for 5-7 mins per side until charred.
  6. Whisk Sauce: Mix the mayo, sriracha, and lime. Slather on the bun and enjoy!

🤔 Common Questions about Black Bean Burgers

Can I bake these instead of frying?

Yes! Bake at 375°F (190°C) for 10 minutes per side. They won’t be as crispy as the skillet version, but they’ll be just as delicious and lower in fat.

Do I have to roast the beans first?

Technically no, but it’s the difference between a “good” burger and a “great” burger. Roasting prevents the patties from becoming mushy when you add the other wet ingredients.
